After a busy week, this Greek salad-inspired bowl is the perfect balance of fresh flavor and nutrients! ⁠

Dressing:
- 6 tbsp cold-pressed extra virgin olive oil
- 3 tbsp red wine vinegar
- 1-2 cloves of crashed garlic
- 1 tbsp Italian seasoning (or to taste)
- Crack of salt & pepper

Combine chopped cucumber, tomato, and red onion into a bowl. Add homemade dressing and mix. Top with a sprinkle of feta and black olives to taste!

We paired this salad with grilled chicken and rice, but feel free to use whatever protein and grain your heart desires🤍
